When we think of the sea, we think of deep blue, aquamarine, and crystal-clear waters or deep and turbulent waters. What Makes the Ocean Special

Foods From the Ocean
There’s nothing like freshly caught sushi, but thanks to refrigeration, canning, and freeze-drying, you can enjoy fish, seaweed, and more, even when landlocked.

Fish: Like everything today, consuming fish has become confusingly laden with warnings about mercury and other potential toxins due to farming, pollution, and concerns about sustainability and overfishing. This doesn’t mean you should skip eating fish unless it conflicts with your personal philosophy, or you have other reasons to refrain. Stick to fast-growing and repopulating Atlantic mackerel, herring, rainbow trout, salmon, and sardines to enjoy some of the planet’s richest and healthiest sources of lean protein and Omega-3s. Vacillating between wild-caught, farmed, and canned? While wild-caught Alaskan salmon produces a smaller carbon footprint than farmed Norwegian salmon, both offer healthy Omega-3s, while canned salmon provides high amounts of calcium. Other low-mercury fish like anchovies, catfish, flounder, haddock, mullet, plaice, and pollock, followed by clams, crab, crawfish, and oysters, are additional healthy seafoods to add to your diet.

Seaweed: There are several types of seaweed to eat beyond wrapping hand-rolls at your local sushi bar:

  • Sea Grapes: Also known as umibudo, this “longevity seaweed” is sold fresh to preserve the bubble-like leaves. Much like caviar, the nutritious tiny bubbles pop when eaten, releasing a flavorful brininess. They are blanched and shocked in cold water to remove the extra salt and served in Japan, Malaysia, and the Philippines. Okinawans also enjoy them raw with soy sauce.
  • Hijiki: Brown seaweed from Japan’s, Korea’s, and China's rocky coastlines that is boiled and dried, taking on a black hue and a salty, potent flavor. One of the types of seaweed for cooking, it is reconstituted producing thin strands and simmered with fish or vegetables, cooked with rice, or served as a side dish. However, it isn't recommended for regular consumption as it contains inorganic arsenic, increasing cancer risk.
  • Nori: This well-known red seaweed, called zicai in Chinese and gim in Korean, is pressed into dried sheets that are dark green to black or toasted. It is the seaweed used in sushi rolls and one of the most popular types of seaweed snacks. Note: It quickly absorbs moisture, requiring air-tight storage with a desiccant to preserve its “crisp.”
  • Kombu: A brown seaweed type of kelp typically sold in wide, dry strips found in Japanese cuisine reconstituted to make dashi (a clear shabu shabu broth) and season sushi rice. Powdered kombu is used for Japanese tea called kombucha (not the same as fermented probiotic beverages).
  • Wakame: Although dark green, this slightly sweet, silky-textured seaweed is classified as a brown kelp native to coastal areas worldwide. It is dried or salted and packaged in vacuum packs, then used in seaweed soup, seaweed salads, and miso soup.
  • Ogonori: Also known as Gracilaria or sea moss, this seaweed has a purplish color and is available powdered or in dried strips. It is pickled and used in salads and poke bowls. It is a source of agar, a plant based jelly-like substance used in gelatin to make custards, jellies, and puddings.

There are many more types of edible seaweed, including dulse, arame, sea lettuce, aonori, mozuku, mekabu, chondrus crispus, oarweed, palmaria palmata, and Irish moss.
